A widely used strain in the production of Witbier and Grand Cru. This yeast will produce spicy phenolics which are balanced nicely by a complex ester profile. The subtle fruit character and dry tart finish will complement wheat malt, orange peel and spice additions typical of Wits.

I remember the days when we could get this strain whenever we wanted. This is the perfect strain for Tripel and Grand Cru styles, but honestly I love it for just a low gravity belgian style pale ale or blonde. If you’re trying to get crazy, start with a low gravity Belgian Pale Ale and ferment, then rack that off and rack your Belgian Tripel or Golden strong on the yeast cake, then finish it all off with a giant stout or Belgian Dark Strong!
