The Flemish Ale Blend is one of the best for mixed fermentation sours, and has pretty much every bug youd want to use for such a time investment type beer. While its totally worth the time investment, you want to add the best culture to give you what you want!
If youve never done a long term sour, this is a great blend to start with, and it only gets better in the next generation. It contains saccharomyces, Lactobacillus, Brettanomyces and Pediococcus, all of the good bugs! The best part is, youre not tied down to a Flemish Red Ale! You can do that, or something light, or a dark, high gravity sour, or anything in between! The complexity of this blend yields big stone fruit characteristics and is especially wonderful for fruited sours, and adds a ton of extra complexity to the lighter, quicker sours like berliner-weisse!
