New Zealand Southern Cross T90 Hop Pellets, 2 oz sealed package
This triploid cross between Smoothcone and a daughter of a 1950's American hop and Fuggle was released from New Zealands Hort Research hop breeding program in 1994.
Usage
High AA's and low cohumulone make Southern Cross shine as smooth, clean bittering hop with a light, resinous quality that acts well as a counterbalance in fruit forward hoppy styles, and as a bittering hop in lighter styles. As a late and dry hop addition, this variety pairs well with other fruit forward hops, adding both counterbalance and citrus fruit to the overall bouquet.
Aroma and Flavor
Expect a distinct character of lemon peel and pine needles in late and dry hop additions, as well as a pleasant and subtle spice characteristic for balance. As a bittering hop, Southern Cross is crisp and clean with mild hints of a resinous spice.

Possible Substitutes for Southern Cross
While there is no real substitute for this unique variety, you can try Sorachi Ace, which will give you the lemon and some pine, but will also contribute some dilly, earthy characteristics, and Fuggle, which will be less citrus forward and more earthy.
