US Sorachi Ace T90 Hop Pellets, 2 oz sealed package
Released in 1984 and grown for Sapporo, then later re-released in the US in 2006, Sorachi Ace is the result of mixing Saaz and Brewer's Gold, then crossed with a Japanese male, to create a Saaz-like noble hop with higher Alpha Acids and a similar cohumulone content. While Sorachi Ace did not mimic Saaz in the least, it has been noted by craft brewers to be a very unique hop variety.
Usage
With low cohumulone and high AA's, Sorachi Ace works well as a surprisingly clean bittering hop across beer styles. Due to it's exceedingly unique flavor profile, late and dry hop additions have been known to shine in some beer styles, such as Saisons and blended with other citrus forward hops in hoppy styles.
Aroma and Flavor
Expect a surprisingly clean and earthy bitterness from Sorachi Ace, especially in very early boil additions. In later additions, this unique hop variety's odder flavors are exposed, including overt dill characteristics and a distinctly lemon, lemon peel, or lemongrass overtone. Subtler flavors of coriander and light spearmint add to the melange of flavors and aromas, as well as the potential for lightly oaky or cedar notes.

Possible Substitutes for Sorachi Ace
The commonly accepted substitutes for Sorachi Ace are Simcoe, which will give you a similar bittering characteristic and more piney, catty flavors, Motueka, which will give you a more citrus forward, minty characteristic, and Warrior, which will be less lemon-citrus forward and more distinctly spicy.
