Mangrove Jack's Mead Yeast is known for it's high ester production. This strain will produce a fresh and floral ester profile, especially when fermented cool. This strain is suitable for all types of mead, and has a very high alcohol tolerance, up to 18%, and possibly higher with proper Fermaid K additions and at fermentation temperatures below 77° F.

Expect fermentations done by M05 to finish dry and relatively full bodied, full of complexity with a distinct floral characteristic.

Attenuation - Very High (95% - 100%)

Recommended Fermentation Temperature Range - 59° - 86° F (Better ester production at lower temps)

Flocculation - High
