1 lb of Whole Juniper Berries (Juniperis communis)
Juniper berries have a strong, pine-like and resinous flavor that can be slightly bitter. As they mature, their flavor becomes fresher with notes of citrus. When crushed, they produce a cedar-like aroma. These are one of the key components in Gin, and are very distinct.
Juniper berries can be very strong, and should be used sparingly in the boil. You can also make a tincture by adding 1 to 2 oz to boiling water, and adding this at packaging.
As beers with Juniper berries age, the flavor becomes less forward, and blends with the other flavors in the beer more.
Directions for Use
- Crush 1 to 2 oz and add at 15 minutes left in the boil
- Crush and add 1 to 2 oz to boiling water and allow 15 minutes to steep, then add to the beer, wine, mead or cider at packaging, a little at a time until the intensity is where you want it
- Crush and add 1 to 2 oz to a clean spirit (like a clean vodka) and allow 5 - 7 days to steep. Add this at packaging, a little at a time, until the intensity is where you want it
- Crush and add 2 to 4 oz to your Gin Basket with your other herbs and run your distillate through
