2 ounce package. Dry amyloglucosidase enzyme, ideal for distillation of spirits for maximum conversion, or for Brut IPA styles, or any beer style where you want to convert all the starches in the mash to fermentable sugar. This shelf stable enzyme is ideal for carbohydrate reduction and maximization of conversion both in the mash and during fermentation.
Use 1 oz per 5 gallons in the mash between 145° to 155° F to maximize enzymatic activity and conversion of 1-4 and 1-6 linkages to simple glucose.
Use 2 oz during fermentation to maximize enzymatic activity and conversion during fermentation.
