Diammonium Phosphate (DAP) adds back available nitrogen to your yeast. It's especially useful for musts very low in nitrogen, like mead or honey wine. If you are using Fermaid K for fermentation, add DAP to the nutrient regiment during the first part of fermentation of any must. If fermenting beer wort, Fermaid K is sufficient on it's own.
Directions: Use approximately 1/2 teaspoon per 5 gallons. Dissolve DAP in sterile water and add to fermentation, or add powder directly to the end of the boil.
For Mead or Cyser, add at day 2 and day 3 of fermentation. For most wine musts, follow recommended nutrient requirements of the individual yeast strain you are using.
