Comet is a cross of English hops and a wild American variety that was released in 1974. After a stall in commercial production in the 80's, Comet has made a comeback in recent years due to it's unique profile.
Usage
Comet is ideal to add an earthy, 'wild American' bittering profile due to higher alpha acids. As an aroma hop, expect some earthy, grassy characteristics mixed with light, grapefruit flavors. The 'wild American' flavor characteristics come across as vaguely earthy, fresh green grass and light citrus.
Aroma and Flavor
Comet lends a distinct, earthy bitterness with hints of fresh grass and a lightly catty/piney/earthy character. When used as an aroma hop, expect a fragrant grassy characteristic mixed with distinct citrus zest that goes a long way towards accentuating more citrus forward hops. This earthy, citrus zest flavor is ideal for both citrus forward IPA's and Pale Ales and farmhouse and wheat style beers.

Another old school favorite! I always used Comet like a bittering hammer in my IPAs, and it always went well, but I’ve found that it adds a wonderful complexity as a late addition as well. It’s a clean bitter addition, citrus forward, and has this cool, slightly grassy / dank characteristic that pairs really well with Simcoe and Mosaic.

Possible Substitutes for Comet
The commonly accepted substitutes for Comet are Galena, which will lend a little less pine and earth, and Summit, which will add more garlic and cattiness on top of the fresh, green grassy characteristics.
