Description:
American 6 row malted barley is very high in diastatic power, and ideal for conversion of high adjunct mashes. You can use this at a rate of 10% to add conversion power to a normal mash, up to 100% just like any other base grain, although beware of higher susceptibility to DMS and protein haze if doing a S.M.A.S.H.
American 6 row is generally higher in protein, with a thicker husk than standard American 2 row. It has less starch, but makes up for the lack by having so much enzymatic power. It is typically used for mashes that involve high corn or rice percentages.
